For the honey cookies, first sift flour and baking powder. Quickly knead with the remaining ingredients to a smooth dough. Form into a ball, wrap in plastic wrap and place in the refrigerator for about 60 minutes.

In the meantime, line a baking tray with baking paper. Preheat the oven to 200 °C.

Roll out the dough and cut out circles. Place them on the baking sheet and bake for about 12 minutes, not too dark.

While still warm, brush half of the circles with honey and place another circle on top of each.

Let the honey cookies cool and sprinkle them thickly with powdered sugar before serving.
