Instructions:

For the berry meringue, quickly knead the flour, butter cut into pieces, egg, salt and sugar into a smooth dough.

Add a little more cold water or flour as needed. Form a ball, wrap in plastic wrap and place in the refrigerator for about 30 minutes.

Preheat the oven to 180 °C convection oven. Line the baking tray with baking paper.

Roll out the dough on floured work surface and line the bottom of the baking tray with it. Prick several times with a fork. Spread with jam.

Beat the egg whites with the lemon juice until stiff. Add half of the sugar and continue beating. Add the remaining sugar and beat again until stiff.

Place on top of the jam, smooth out and bake in the oven for about 30 minutes until light golden brown. Remove from oven, cut into small lozenges while still hot and let cool.

To garnish, finely grind the cranberries with the vanilla sugar in a blitz chopper. Sprinkle over the berry meringue lozenges.
