Instructions:

For the BBQ sauce, peel and finely dice the shallots and garlic. Bring to a boil with the remaining ingredients and simmer gently over low heat. Season with salt and pepper and strain through a sieve according to taste.

Salt the chicken. Finely blend the garlic and shallots. Sear the chicken in sunflower oil in a casserole, add garlic, shallots and 1 tablespoon BBQ sauce, cover with a lid and roast in the oven at 120 °C for about 45 minutes. After that, pluck the chicken into small pieces.

Peel the zucchini lengthwise into thin strips and mix with salt and pepper. Let stand for 10 minutes and then add the remaining ingredients.

Cut the roll in half horizontally and lightly toast in the oven.

Spread the BBQ sauce on the bottom of the roll, arrange the chicken on top and garnish with the zucchini, place the lid on top and serve immediately.
