For the Kaiserschmarren, beat egg whites with a pinch of salt until stiff. Mix egg yolks with milk and flour, fold in raisins and beaten egg whites.

Heat 1 – 2 tablespoons of oil in a pan and pour in about half of the batter. Allow to brown, turn with two spatulas and also brown briefly, then use two forks to divide the dough into small pieces.

Bake until done, stirring constantly. Proceed in the same way with the second half of the dough.
