Instructions:

For Beef Medallions with Elderberry Butter Sauce Pat meat dry, season and sear in hot butter for about 1 minute on both sides.

Place on a preheated plate and place in oven preheated to 80 degrees for 15-20 minutes.

For the sauce, dissolve the drippings with elderberry syrup. Add red wine and boullion and reduce to about 1 dl of liquid. Remove pan from heat and stir in butter in small portions.

Reheat sauce but do not boil anymore. Season to taste with salt, pepper and lemon and serve the beef medallions with elderberry butter sauce.
