For the wild garlic spinach dumplings, sauté onion in 2 tablespoons butter. Chop wild garlic into fine strips and fry briefly with golden brown onions.

Whisk lukewarm milk, eggs, pepper and nutmeg, pour over the dumplings, add young onion and wild garlic.

Add finely chopped spinach as well, mix well and let rest for about half an hour. In the meantime, chop mountain cheese into very small cubes.

With wet hands, form a flat mass from the dumpling mixture in one hand, put about 1 tablespoon of cheese cubes in the middle and now form a dumpling evenly around the cheese.

Press together carefully (not too tightly) and roll briefly in flour. Cook in slightly boiling water for 10 minutes and sprinkle the wild garlic spinach dumplings with browned butter and grated Parmesan.
