Instructions:

First beat egg yolks with raw cane sugar, vanilla sugar and oil until foamy. Mix in poppy seeds and rum. Mix in the wholemeal spelt flour.

Beat the egg whites with a little lemon juice until stiff and fold in carefully. Spread the mixture into a greased and floured loin pan. Bake in the oven at 170 °C. Allow to cool.

In the meantime, heat the coconut oil and melt the cooking chocolate in it (not too hot). Mix with some lemon juice and glaze the saddle of venison with it.
