Instructions:

Spread bacon cubes evenly in a roasting pan.

Brush Plätzli with mustard and season.

Layer the meat with the vegetables, mushrooms and thyme. Place roasting pan on the griddle and heat over high heat until it sizzles.

Extinguish with apple cider. Cover and simmer gently on low for 40 min. About halfway through cooking time, turn everything together in the roasting pan to the other side so that the bottom Plätzli are on top. Finish cooking.

Shortly before the end of the cooking time, add the apple cubes and simmer. Take out the softly cooked Saftplätzli and keep warm. Slightly thicken the sauce and season to taste with salt and freshly ground pepper.

Serve with: spaetzli, fried potatoes, mashed potatoes, pasta, polenta, etc.

Variations: – Beef can also be used instead of pork. (Cooking time 90 min, depending on quality) – Instead of cooking on the stove, cook in an ovenproof dish for 1 hour with the lid closed at 180 degrees.
