Avocado Lime Cake with Lime Sugar Glaze

Brush a loaf pan with butter and dust with flour. Preheat the oven to 165 °C top and bottom heat.

Cut the avocado in half, remove the pit and separate the flesh from the skin. Finely puree this in a blender together with the yogurt and the zest and juice of the limes.

Beat the butter with the sugar in a food processor until creamy, gradually adding the eggs.

Mix the flour with the almonds and baking powder. Gradually add to the egg mixture along with the avocado and yogurt mixture and mix until smooth.

Pour the batter into the pan and bake in the oven for 50 minutes (test with a stick). After 20 minutes, cut the cake slightly lengthwise.

Remove the cake from the oven, let it cool, turn it out of the pan and let it cool on a cooling rack.

For the frosting, mix the confectioners’ sugar with enough lime juice to make a thick frosting. If desired, use less lime juice and add a little water.

Spread the icing over the cake and sprinkle a strip of pistachios lengthwise down the center. Allow the glaze to set and serve the cake.
