For the potato pancake boil potatoes in water until soft, rinse with cold water and peel. It does not matter if the potatoes are a little cracked.

Heat oil in a large frying pan and slowly brown the diced onion pieces over half the heat. Do not let them get too hot, otherwise they will burn!

When the onions are light brown, add the potatoes to the pan, fry for a few minutes, turn the heat down even lower and mash the potatoes with a masher. Then salt, mix and serve.
