For the cranberry cakes, wash and dry the cranberries.

Separate the eggs and beat the egg whites with a pinch of salt until stiff. Beat the yolks with the sugar until foamy. Add the flour by the spoonful and mix until creamy. Add milk gradually and stir until the flour no longer forms lumps. The dough should be viscous. Finally, fold in the snow and cranberries.

Heat a generous amount of clarified butter in a frying pan and drop the batter by the spoonful into the pan. When the bottom side is already golden, turn the cake and bake on the other side until golden.

Sprinkle the cranberry cakes with powdered sugar and serve with a glass of milk.
