For the plaice fillets, salt the plaice fillets and sprinkle with lemon juice. Finely chop the onion and fry in hot oil with the smoked meat cut into strips.

Let the mixture cool down. Mix the dill, chives and parsley with the eggs and stir into the onion mixture.

Coat the plaice fillets with the mixture, roll up and tie. Fry in margarine on all sides and let fry for about 15 – 20 minutes at low heat.

Take out the plaice fillets, pour the roast stock with crème fine and let it boil a little and season with mustard.
