For the spice flatbread, dissolve the yeast and sugar in lukewarm water and mix with 300g (!) of flour. Cover and leave to rise in a warm place for 30 minutes. Then add the remaining flour, the salt, the herbs and the finely chopped garlic. Knead well and let rest again for 25 minutes.

Roll out the flatbread thin and round on a floured work surface and let it rest for another 10 minutes. Brush with a little olive oil and sprinkle with sesame seeds.Preheat the oven to 160°C and bake the flatbread for about 20 minutes.Serve the spice flatbread immediately and still hot.
