1. harden quail eggs in boiling hot water in 7 min., rinse when cool, peel and cut in half lengthwise.
Mix cornichons, onion, tartar, tomato ketchup, capers, parsley, mustard and oil. Season well with paprika, salt and freshly ground pepper.
Toast bread, cut out stars with a cookie cutter. Spread tartar mix evenly on top and arrange with quail eggs.
