Peel onion and cut into thin rings. Peel and finely dice ginger. Peel carrots and cut into fine slices. Peel garlic. Rinse lemon in hot water, pat dry, finely grate peel and squeeze out juice. Place rice in a colander and wash under running water until water remains clear. Then drain.

Wash turkey breast fillet with cold water, pat dry with kitchen paper and cut into bite-sized strips. Heat oil in a pot and brown meat in it on all sides. Remove meat strips from pot and mix with lemon zest and 1 tablespoon lemon juice, season with salt and pepper.

In the same pot, melt butter with maple syrup. Over moderate heat, sauté onions, ginger, almonds, cardamom and cloves in it. Add rice and press garlic into it. Fry both briefly.

Mix the stock with the cumin and turmeric and pour it over the vegetable rice. Add carrots and simmer with closed lid at moderate heat for about 10 minutes. Do not stir.

Add meat strips and cranberries on top of rice, close lid and let cook on low heat for another 5 minutes. Turn off heat and let pilaf sit for 5 more minutes.

Season pilaf with salt and pepper and season with maple syrup and lemon juice.
