Line a baking tray with baking paper.

For the small carnival doughnuts, sprinkle Amarettini thickly with confectioners’ sugar using a sieve. Set aside.

Melt the dark chocolate coating according to the instructions.

In another saucepan, soften white couverture, also according to package directions. Once liquid, divide among three bowls: For green chocolate, color one portion with matcha powder. For yellow chocolate, stir turmeric into another portion. For turquoise chocolate, color the third bowl with matcha powder and blue food coloring.

Pour dark chocolate coating onto prepared baking sheet and smooth with a palette. Using a teaspoon, spread the three colored chocolates in thin lines in a criss-cross pattern over the top. Using a wooden chopstick, “bubble” through the surface in circles until a pretty marble pattern is formed.

Spread the prepared doughnuts on top of the chocolate and finally sprinkle with chocolate lentils and sugar confetti as desired.

Let the chocolate harden (preferably in a cool place). Break or cut into pieces according to taste. Store in a cool place.
