Peel the pineapple, cut into thin slices, and arrange on a plate like a carpaccio.

Grind the plucked mint leaves well in a mortar, so that you get a green paste. Then add enough sugar to absorb the moisture from the mint and turn bright green.

Spread the green mint sugar evenly over the pineapple. At the last moment, add a little bit of natural yogurt on top.
