For the vegetable casserole with bacon, first knead all the ingredients for the shortcrust pastry into a smooth dough, wrap in cling film and leave to rest for 30 minutes.

Cut the vegetables lengthwise into thin slices, cut the slices of melanzani lengthwise in half again and season with salt and pepper. Cut the cherry tomatoes in half.

Mix the curd with the nuts and parsley, season with salt and pepper.

Roll out the short pastry thinly and line a round baking dish (approx. 24 cm) with baking paper. Spread the curd on the bottom and arrange the vegetables on top, alternating from the outside to the inside in a circle.

Spread the fine bacon cubes and cherry tomatoes over the vegetables, drizzle with a little sunflower oil and bake the vegetable casserole with bacon in the preheated oven at 180 °C for about 30 minutes.
