Instructions:

To make the gratinated pancakes, first mix the batter for the pancakes and let it rest a bit while you prepare all the other ingredients. You can find a complete basic pancake recipe here.

Peel and finely chop the onion and garlic.

Clean and slice the mushrooms.

Heat the butter in a pan and sauté the onion and garlic.

Add the bacon cubes and fry for about 5 minutes.

Add the mushrooms and season with salt and pepper. The mushrooms leave a lot of liquid at the beginning, let it evaporate while stirring.

Mix in the peas.

Season the cream with salt and pepper and stir with the flour until smooth.

Pour into the pan and bring to a gentle boil until the sauce thickens. Let cool a little and stir in the egg.

Preheat the oven to 200 °C.

Now bake the pancakes.

Roll the filling into the pancakes and place them in a greased baking dish. Sprinkle with cheese and bake in the oven on medium heat for about 20 minutes.

Serve the baked pancakes hot.

Serve with leaf salad in all variations.
