Quarter, seed and peel the peppers. Blanch (scald), peel and seed the tomatoes. Halve the young onions as well as the young garlic. Halve the melanzani and slice them as well as two (!) zucchini.

Now first sauté the bell pepper strips together with the young onions and young garlic in olive oil. Add the herbs, then add the melanzani. Then mix in the zucchini, at the very end stir in the tomatoes. Season to taste with salt and pepper.

For the filling, finely chop the smoked meat, mix with crème fraîche and season if necessary. Finely slice the remaining zucchini, blanch and dry. Fill each slice with a little of the smoked meat farce and roll into a triangle.

Dredge the patties in flour, egg and breadcrumbs and fry in hot vegetable fat or clarified butter. Arrange the vegetables on warmed plates and garnish with the Tascherln.
