Bring the water, butter, milk and salt to the boil. Gradually pour in the semolina, stirring throughout. Cook on low heat for about ten minutes.

In the meantime, butter a gratin dish well. Preheat the oven to 220 °C.

Finely grate the Gruyère. Mix the egg yolks with a little pepper and nutmeg. Whip the egg whites with a pinch of salt until stiff.

After ten minutes cooking time, stir the Gruyère and the yolks into the semolina. Season if necessary. Finally, stir in the snow. Pour immediately into the prepared dish.

Bake the semolina-cheese casserole in a 220 °C oven on the lowest rack for about forty minutes. Bring to the table hot.
