For the couscous-vegetable loaf, swell the couscous with the vegetable soup according to the package instructions.

Cut the onion into small cubes, as well as the remaining vegetables very finely and fry everything with the crushed garlic clove in a pan.

Add the vegetable mixture to the couscous and mix with the eggs and wholemeal breadcrumbs. Form about 8-10 loaves and fry in olive oil on both sides.

Serve with salad.
