For the foam rolls, cut the puff pastry lengthwise into 12 strips, roll up onto the molds and brush with beaten egg.

Bake in the oven preheated to 175 degrees until golden brown. Remove from the molds and let cool. Beat the egg whites with a pinch of salt until stiff, then stir in 3 tablespoons of sugar.

Meanwhile, boil the 250 g sugar with the water for 2 1/2 minutes (DO NOT caramelize!!!!!). Mix the sugar into the beaten egg whites (using a food processor) and beat until the egg white/sugar mixture has cooled or reached the desired consistency.

Then fill the puff pastry rolls with the egg white/sugar mixture using a piping bag and serve.
