For the emmer rice with chard, peel and finely chop the red onion and garlic.

Heat butter in a saucepan and sauté the onion until translucent. Add the garlic and sauté briefly. Stir in emmer rice and let it become glassy. Deglaze with white wine and let evaporate while stirring.

Pour in vegetable soup and let rice simmer gently for about 15-20 minutes. For the vegetables, clean the spring onions and cut into fine rings.

Wash the chard thoroughly. Wash the wild garlic, dab dry and chop finely. Heat the oil in a frying pan and sauté the spring onions briefly over medium heat. Add the chard and let it steam until it collapses. Stir in the wild garlic and season with salt & pepper.

Stir the vegetables into the emmer rice and garnish with diced cheese. Serve the finished emmer rice with chard warm.
