For the ratatouille strudel, sauté the vegetables, onion and garlic in hot olive oil for about eight minutes, remove, pour off any liquid that has formed, season and mix in the pesto.

Carefully unfold the dough, place it on a tea towel, butter 1 dough sheet at a time and place all the dough sheets on top of each other.

Spread Parmesan cheese, leaving a border of about 4 cm. Spread vegetables on bottom 2/3 of dough, also leaving a margin of about 4 cm on both sides.

Wrap the side edges, lift the tea towel slightly, roll up the strudel loosely, place it on a baking sheet lined with baking paper with the closure facing down and brush with olive oil.

Bake for about twenty minutes on the middle shelf at 200° C in a preheated oven. During the baking time, brush the ratatouille strudel frequently with the remaining olive oil.
