For the apple marzipan pastry, roll out the puff pastry and cut into rectangles or squares. Wash the apples, peel and core if necessary. Cut into 1/4 or 1/8 pieces and place upside down on a puff pastry square with a small piece of marzipan.
Sprinkle with cinnamon and cane sugar and place the four corners in the center. Insert a pumpkin seed (or almond stick) into the corners to secure them to the apple. Brush with bubbled egg and bake in the oven at 180°C hot air for about 10-15 minutes. Allow to cool briefly and sprinkle the apple marzipan puffs with powdered sugar.
