For the pineapple tiramisu, strain the pineapple pieces, collect the juice and puree the pineapple pieces.

Mix the mascarpone with the powdered sugar, vanilla sugar and cream stiffener. Add the pureed pineapple. Add some Batida de Coco to the pineapple juice and briefly soak the biscuits in it.

First pour some of the mascarpone cream into a mold, then spread the dipped biscotti on top. Again cream, biscotti, cream, biscotti and finish with a layer of cream.

Sprinkle the pineapple tiramisu with coconut flakes and best put in the refrigerator overnight.
