Instructions:

Prepare the various fillings for the finger food patties:

For the spinach filling, wash spinach and drain. Peel and finely chop the shallot. Sweat in a frying pan with 2 tbsp butter, add spinach and let it fall together. Season with salt, nutmeg and pepper and let it cool down a bit. Stir in breadcrumbs and an egg yolk.

For another filling mixture, mash feta cheese with a fork and mix with egg yolk, season with pepper.

For the third filling mixture, finely shred mint and dried tomatoes. Mix with fresh goat cheese, pepper and one egg yolk.

Preheat the oven to 220 °C (fan oven 200 °C , gas mark 4-5).

Roll out the puff pastry and cut out circles of 10 cm ø with a cookie cutter and place them on a baking paper.

Whisk 2 egg yolks with 1 tbsp. water and brush the pastry circles with it. Put 1 tbsp of the different fillings on top, fold them together and press the edges neatly. Brush with egg yolk and sprinkle with poppy or sesame seeds. Prick the finger food patties with a fork several times and bake in the oven for about 15-20 minutes until golden brown.
