For the chocolate cream, soak the gelatine in cold water. Whip the cream until stiff. Whisk together the curd, sugar and vanilla sugar.

Dissolve gelatine, mix with a little curd, then stir into the remaining curd. Fold in the cream and chocolate shavings and chill the chocolate cream.
