Instructions:

For the mushroom quiche with kohlrabi salad, mix the dry ingredients together. Add oil, add lukewarm water gradually until a smooth dough is formed.

Leave to rise in a warm place for half an hour. Cut vegetables into small pieces, roast everything briefly in a pan. Allow to cool. Butter the tart pan, knead the dough again briefly and line the pan with the dough. Let rest briefly.

Bake briefly (approx. 7 minutes) in preheated oven at 180°C convection oven. Mix eggs, yogurt and spices with a whisk. Grate cheese finely, remove pan from oven, spread filling on top.

Pour glaze over and spread cheese on top and let bake for about 30 minutes until done. Peel kohlrabi, grate coarsely, stir in yogurt, garlic and oil, season well with spices.

You can also grate an apple or carrot to the mushroom quiche with kohlrabi salad. Or serve another salad with it.
