For the coq au vin, salt the chicken drumsticks and coat in flour. Cut bacon and onion into cubes. Halve the mushrooms. Fry bacon and onion in a pan – add mushroom.

Drain everything in a colander. Brown the drumsticks in the remaining oil. Deglaze with cognac, add red wine and some chicken soup. Season. Bring to a boil and steam, covered, in the oven (140 °C) for about 60 minutes.

From time to time add some chicken soup. Add bacon mixture again and steam for another 10 minutes.

Remove the chicken legs from the sauce. Mix cornstarch with some cold red wine, add briskly to the sauce and bring to the boil again. Then serve.
