Separate the egg for the apricot dumplings with strawberry topping. Beat the egg whites to snow.

Mix the curd cheese with the yolk, spelt semolina and a pinch of salt with a mixer. Fold in the snow and let it rest for at least 30 minutes. The consistency of the dough for the dumplings should be rather firm.

Bring salted water to a boil in a larger pot. Moisten your hands and flatten the dough in your hand to about the size of a palm. The dough should be about 1 cm thick. Place an apricot in the center and fold the dough well around it, sealing it and pressing it well.Keep moistening your hands.

The finished dumplings are best immediately put into boiling water. The cooking time is about 8 – 10 minutes (the dumplings must float on top).

In the meantime, wash and hull the strawberries and puree them with a hand blender. Arrange the strawberry puree on a plate, place the dumplings on top and sprinkle with the maple sugar. Quantity is enough for 6 – 8 apricot dumplings with strawberry mousse, depending on the size of the apricots.
