For the b’soffen Rumstriezel, first grease an ovenproof dish and preheat the oven to 200 °C top/bottom heat.

Pluck the Striezel into pieces. Mix eggs, milk, curd cheese and Striezel pieces. Stir in a little butter. Pour everything into the pan and bake for about 25-30 minutes.

In the meantime, caramelize some sugar and pour in the whipped cream. When the sugar has dissolved, stir in the rum and espresso.
