Rinse and core the apricots and peppers. Cut into coarse cubes. Remove the peel from the onions and chop them, chop the peppers, remove the peel from the garlic and crush it with a press, remove the peel from the ginger and grate it finely. Put all the prepared ingredients in a large saucepan. Add the sugar, spices, salt, turmeric, mustard seeds with the vinegar. This will give the chutney the right spice. Stirring frequently, cook the chutney over medium heat for about fifteen to twenty minutes and then, while it is still hot, fill it into the jars and close tightly with the screw cap.

This will keep the chutney for several months.

Tips:

– Cleanliness is important. Clean jars and lids beforehand with hot water and detergent and dry upside down or in the oven at 100 degrees Celsius.

– Place the jars on a wet dish rack when filling them. This will prevent them from bouncing due to the temperature.

– Label a nice label and stick it on the jar. Cover the lid with a small piece of cloth and tie it tight with a ribbon. This makes the chutney a nice gift idea for friends, acquaintances and relatives.
