Instructions:

For the vegetable casserole, salt the eggplant slices and let them stand for 1/2 hour, then dry them with paper towels. Heat the oil and fry the eggplant and zucchini slices until lightly browned. Lightly brown the onion in oil, add the tomato sauce along with the spices and bring to a boil briefly.

Spread some sauce in a baking dish, first layer in the eggplant slices, then sauce again, then the zucchini slices. Continue in this way until all the ingredients are used.

Sprinkle some grated parmesan between each layer, according to taste. Finally, spread the thinly sliced mozzarella on top and sprinkle with the remaining mozzarella. Bake the vegetable casserole at 200° for 20 minutes until golden brown.
