For the ginger peppermint chutney, start by washing the peppermint, spinning it dry and roughly chopping it. Using a blender, blend the peppermint together with the sugar, vinegar, salt and chili peppers to a paste.

Then strain the candied ginger plums well, cut them into very fine cubes and mix them with the fresh, peeled ginger and the peeled garlic to the peppermint. Finally, add only the very finely diced shallots and stretch the ginger-peppermint chutney with a little fruit vinegar if needed.
