Kohlrabi Soup with Ham Gnocchi

Instructions:

Cut the ham into small pieces and grind in a hand mixer. Remove the crust from the bread and soak in the whipped cream. Add to the ham in the hand mixer form. Mix until everything has a smooth consistency. Season with pepper. Rest in the refrigerator for half an hour.

In the meantime, peel and trim the kohlrabi. Finely chop the shallots and sauté in the butter. Add the kohlrabi.

Sauté briefly, then add soup. Cook until the kohlrabi are soft. Puree. If necessary, pass through a sieve. Add the cream and bring to the boil again. Season with salt, pepper and a pinch of nutmeg.

Make dumplings from the ham dough with two teaspoons. Steep in lightly simmering water for about five minutes. Remove from water. Serve the soup with the dumplings.

Tip: Always use an aromatic ham, this gives your dish a wonderful touch!
