Instructions:

For the lentil stew with spinach, heat ghee in a saucepan. Separate thyme leaves from stems.

Sauté together with the carrots and onion for about 5 minutes. Add garlic and tomatoes and saute for another minute.

Add the mountain lentils and pour the vegetable soup. Bring soup to a boil and simmer for about 30 minutes.

Allow spinach leaves to thaw slightly and chop into small pieces. Add spinach to the pot and simmer for another 5 minutes.

Season with salt and pepper and serve the lentil stew with spinach with a dash of olive oil.
