For baked snow dumplings, first grease two round gratin dishes with butter. Preheat oven to 200 °C hot air.
Beat egg whites with salt until very stiff. Add granulated sugar by the tablespoon and whip again until stiff and a knife cut remains visible.
Fold the egg yolks into the snow mixture one at a time. Sift the flour and finally fold it in.
Using a pastry card, pour the dumpling mixture into the prepared ramekins. Bake in a hot oven for about 10 minutes.
Sprinkle the baked snow dumplings with powdered sugar, cut each in half and serve immediately.
