For the baguette, first dust a baking sheet with flour. Place the flour in a bowl, make a well in the center and add the yeast. Mix with the water and a little flour to a thick pre-dough. Cover and let rise for 15-20 minutes.

Sprinkle salt on the remaining flour and mix everything into a smooth dough. Knead the dough until it pulls away from the bottom of the bowl and let rise, covered, at room temperature for 2 ½ hours.

Knead on a floured work surface and divide into 3 pieces. Shape the dough pieces into long sticks and let rise on the baking sheet, covered, for another 15 minutes.

Cut the rolls several times diagonally with a sharp knife, brush with lukewarm water and bake the baguettes in the preheated oven at 220 °C on the lowest rack for 35 minutes.
