California Rolls are filled with avocado & crab meat, “Scandinavia Rolls” with salmon & cucumber – but always the nori leaf is inside.

Cut. Cut avocado into wedges or cucumber into 1/2 cm thick sticks. Slice leek lengthwise into strips and blanch in boiling hot salted water for 1 minute. Fry sesame seeds in a frying pan, cool.

Wrap sushi roll mat with cling film Drizzle cling film with a tiny bit of rice vinegar.

Place one nori sheet, smooth side down, on top. Smooth half of sushi long grain rice on top.

Carefully flip to the other side so that the long grain rice is on top of the foil.

Spread one tsp. mayo on bottom third of nori sheet.

Half of the strips, avocado. Place cucumber sticks and leek strips on top.

Roll up using the roll mat. Form another roll with the remaining ingredients.

Cut each sushi roll into 6 pieces and roll each piece in the toasted sesame seeds on the other side.
