Instructions:

First, preheat the oven to 180 °C. Grease a loaf pan.

Wash the carrots, peel if necessary and grate. Finely grate the chocolate.

Whip the egg whites with a little salt until stiff. Beat egg yolks with sugar until foamy. Sift flour with baking powder, cinnamon and salt and stir in. Then fold in the nuts and add apple juice and oil. Gently stir in the beaten egg whites and finally fold in the carrots and chocolate very briefly.

Pour into the prepared loaf pan and place in the oven for about 1 1/4 hours. Remove and let cool for about 15 minutes before turning out.

In the meantime, prepare the glaze. For this, mix all the ingredients and brush the cake with it.
