Peel the parsley roots and boil them in hot salted water until soft. Leave to cool in cold water. Peel the apples, remove the core and cut them into fine strips, just like the parsley roots. Mix the sour cream with mayonnaise. Mix into the salad. Season to taste with salt, pepper, sugar and lemon juice.
