A great zucchini recipe for any taste:

Mix couscous with enough vegetable soup to make it just runny. Put on top and simmer gently (with a lid) on low heat. Stir occasionally with a fork. When the couscous is soft, the clear soup should be absorbed. Gently fold in a few drops of olive oil with a fork and keep warm.

Cut frutti di mare and fish into even pieces and sauté in olive oil. Add onion rings and zucchini and season with salt and pepper. When the fish is cooked, remove everything together from the frying pan. Extinguish the frying pan with fish stock and stir in the pesto. Just before serving, add Frutti di Mare one more time and heat through.

Arrange couscous in the center of the plate and surround with the seafood.

Sprinkle with parsley and offer a teaspoon of harissa if desired.
