Broccoli roses cook exceptionally gently in the microwave. Combined with milk and cheese, they make a healthy base for a vegetarian meal. This is because milk and cheese provide animal egg whites, which are ideally complemented by potato protein from the supplement. Millet also provides iron, which is better utilized by vitamin C in broccoli.

Rinse and clean broccoli. Cut off roses, chop stems into small pieces. Cook in a large microwave bowl with salt, vegetable soup, water and nutmeg, covered, at 600 watts for 10 minutes, stirring in between. In the meantime, rinse and finely chop the parsley, mix the milk with millet flour. Mix the herb cream cheese together with the Gouda into the milk. This mixture to the broccoli vegetables form. Cover the baking dish again and heat at 600 watts for 15 minutes until the sauce comes to a boil once. Stir once or twice in between. Serve with cooked, peeled potatoes or long-grain rice.

Millet does not contain “gluten” like wheat and therefore does not clump. You can use it to bind sauces without lumps. This is important because you cannot stir the dish constantly when cooking in the microwave.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also have a fresh taste!
