Instructions:

Chop the vegetables. Cut onion into cubes. Do both with 1/2l vinegar, wine, water and spices for 3 min. Add meat, marinate for 24 hours. Take out, sieve marinade and collect. Brown meat in lard. Add diced apple and soup vegetables, sauté. Dust with 1 tbsp flour, add marrow and marinade. Stew for 45 min. Stir flour, eggs, 100ml water and salt. Press dough through a spaetzle press, cook for 2 min. Toss in fat. Sieve the gravy.

Super: Homemade spaetzle

The preparation is quite simple. Making spatzle yourself is really not difficult. And they taste great. Here’s how:

For 2 servings, sift 200g of flour into a suitable bowl. Add 2 eggs, 200ml water and a little salt. The dough should be slightly chewy, so not too runny. If you don’t have a spaetzle press, use a kitchen knife to scrape the pasta speciality directly from the board into the boiling salted water. They are cooked in two minutes. Spätzle can be easily varied: Blanch spinach, crush it and fold it into the dough. Or add pureed tomatoes. They become especially fluffy and tasty if you take them out of the water with a skimmer, shake them off and toss them in hot, lightly browned butter.
