Melt the butter and mix well with the egg yolks – always stirring in one direction – until the mixture foams. Cool.

Stir the flour through with 3/4 of the whipping cream. Roll gently, stirring throughout, until the mixture thickens enough to bake. Cool.

Add the butter-egg mixture, mixing everything together well. Keep stirring in the same direction. Whip the remaining whipping cream until stiff and fold into the batter with the bitter orange water.

Bake in clarified butter until done.

Do not remove the baked blinis from the frying pan with a kitchen knife, but turn them out onto a plate. Sprinkle each bliny with a small amount of powdered sugar and drizzle with the juice of one lemon. Pour the bliny stack with the jelly. Bring to the table hot.
