Instructions:

Rinse the cauliflower. Clean. put in cold salted water for half an hour. Do in fresh, lightly salted water for 15 min. Place in a greased gratin dish. Cut cooked potatoes into thick slices. Place around the cauliflower. Put diced ham and chopped parsley on top.

For the sauce, heat the fat. Sauté peeled, diced onions in it until golden. Stir in flour. Add milk and beef broth. Cook for 7 minutes. Season with salt and paprika. Stir egg yolk whisked with whipping cream into the sauce. Do not make more, otherwise the sauce will curdle. Pour sauce over cauliflower. Sprinkle with cheese and place in hot oven.
