Clean carrots and slice into thin slices. Peel the oranges with a sharp kitchen knife (including the white skin), fillet them, collecting the juice, squeeze out the residue.

In a baking bowl, combine carrots, orange fillets and onion rings. Stir olive oil, lime juice, ginger, orange juice, honey and salt and pepper to make salad dressing and mix with leaf lettuce.

Divide leaf lettuce evenly among plates, garnish with the freshly chopped arugula and arrange with the slices of duck or goose breast.

Tip: Do you know purple carrots? They are an old, very aromatic variety – why not use them for a change!
