Kids: Crumbly Apricot Cookies

For 1 to 1 1/2 baking sheets:

Even the smallest ones may snack on this dough! Chop the apricots, boil them in lukewarm apple juice and let them cool down.

Mix the fat with the agave syrup until creamy. Grind the apricots very finely, add salt and lemon zest. Stir the apricot puree into the fat. Mix flour and almond kernels and work into the fat mixture. Finally, knead the dough well.

Wrap in foil and leave to cool for half an hour. Preheat the oven to 180 degrees.

Grease the baking tray and dust with flour or cover with parchment paper. Roll out the dough on a lightly floured surface to about 1/2 cm thick. Cut out any desired cookies from the dough and place them on the baking tray. Brush the cookies with beaten egg. Sprinkle with chopped sugar pearls, nuts, almonds or sesame seeds.

Bake in the heated oven for about 8 minutes until golden brown.
